The Caseo Estate's vineyard are located
between the Versa and Scuropasso Valley and for this reason
they are a natural meeting point for the whole area. Once
upon a time the Pilgrims needed to consider these vineyards
as the point of reference for their meeting. However, one
vineyard beyond all others, the highest one in the Caseo
Estate, represented for them the ideal crossroad and meeting
place. They named it I CROCIONI (a word, which in Italian
dialect means "crossroad"). In this vineyard we
grow perfumed Sauvignon Blanc grapes. After being processed
with care and experience in our cellars, they give origin
to the refined Sauvignon Blanc wine, we named "I CROCIONI".

| THE VINEYARDS:
|
is located
on the highest side of the Caseo Estate, on the top
of a hill sloping down from 450 to 350 meters in elevation.
It is trained with the "cordon" systems.
The soil is calcareous, approximately 30 cm deep,
based on a marl (clay) layer. It is an optimal exposure
to the sun with a temperature range of 15-17 degrees
day/night.

| THE FERMENTATION:

overripe
grapes are harvested manually in the last week of
September, pressed with a soft crush, then destemmed
whilst the skins are left in contact with the juice
for one night. The racking takes place the day after.
From then on the alcoholic fermentation begins at
a controlled temperature.

| THE MATURATION:
|
takes place
in stainless steel vats for a period of, approximately,
8 months. Furthermore, the wine is bottled and put
on sale, exactly one year after the harvest.

| THE WINE:
|
on the eye
it has a golden yellow colour with yellow hues. On
the nose there are notes of grass, hay, tomato leaf,
tomato, citrus fruits and sage. On the palate it is
fresh, with a full body.

in bottles stored on their sides in a dark and dry
place.
