At the beginning of last century of
a part of the present Caseo Estate belonged to the Canevino
Parish. In a plot of this land the Parish grew a vineyard
producing luxuriant and and aromatic Moscato grapes. As
these were times of pervasive poverty in the High Oltrepò
Pavese area, the Parish was very sensitive also to the material
condition of their parishioners. Accordingly they decided
to assign as a "dowry", for the poorest maids,
the sales revenue of these good and aromatic grapes. For
this reason people began to name thata vineyard the DOWRY
(la DOTE in Italian) and this is still its name and still
today it produces the unmatchable Moscato grapes we use
to make the Caseo La Dote Moscato wine.

| THE VINEYARDS:
|
it is located
inthe sunniest part of Caseo Estate in Canevino commune,
on a hill declining from 450 down to 350 metres in
elevation. The vines have an exposure to south with
the sun and are trained with the guyot system. They
are planted on a calcareous soil. Their output is
7.000 kilos of grapes per hectare with a yield in
wine of 65%.

| THE FERMENTATION:
|
the overripe
grapes are harvested manually in the thrd week of
September and soon after are presed with a light crush.
The juice is cooled and stored in stainless steel
vats at -1°. The fermentation takes place at a
controlled temperature of 15-17 degrees with "la
prise de mousse". Once this phase is finished,
the wine is bottled immediately and put on sale.

| THE WINE:
|
on the eye
it has a straw-yellow colour with golden tinges. On
the nose the flavours of orange flowers, wild sage
and honey are predominant. On the palate it is fresh,
pleasantly sweet, balanced, elegant and fine.
