The
origin of this superb wine is a story of imagination and
of alchemy. Imagination because the idea was to make a unique,
original wine, without any reference on the market. Alchemy
because the defiance was to find the best blend among our
great grapes. Its name? It could not be anything but a fancy
one, yet in sound it resembles its "country" of
origin: MALLEO of CAS-EO. Now please, as was said by ancient
Latin: "let's hold our tongues, let the wine speak".
| THE GRAPES:

Cabernet
Sauvignon, Barbera and Pinot Noir blended in proportion
decided according to the vintage.

| THE VINEYARDS:
|
all vineyard
are in the Caseo Estate and are located on a hill
sloping down 450 to 350 metres in elevation. They
are trained with the guyot and cordon systems. The
soil is calcareous, approximately 30 cm deep, based
on a marl (clay) layer. They have an optimal exposure
to the sun with a temperature range of 15-17 degrees
day/night.

| THE FERMENTATION:
|
the well
ripe grapes are processed separately and their fermentation
takes place 30% in durmast wooden barrels. Every single
wine is stored in barriques at the end of the fermentation
with maceration process (which takes place at the
end of November).

| THE MATURATION:
|
it takes
place in Allier, Nevers, Fontainebleau and Limousine
barriques and it lasts 12 months. Afterwards the three
wines are blended and give origin to the Malleo wine
that matures for 6 more months in stainless steel
vats and 16 months in bottle before its selling.

| THE WINE:
|
on the eye
it has an intensive ruby-red colour with violaceous
hues. On the nose it is tangy, full, with a red fruit
flavour. On the palate it is warm, full bodied and
pleasantly tannic.

| STORAGE:
|
5 - 7 years
in bottles stored on their side in a fresh and dark
place. It will reach its best 3 - 5 years after the
vintage.

served at
18°- 20° it is ideal with red meats, game,
mature/aged cheeses.
